  • Walt Disney World Orlando Pictures

    We had a good time at Disney World, the kids especially enjoyed the excitement of staying at different hotels. We stayed at one hotel that had a seperate kids room with bunkbeds, which was nice for us.  They loved to see all their favorite Disney cartoon characters and get on rides.  Thanksgiving day was packed full of people, the weather was comfortable.  Food was great!

  • Happy Birthday Josiah!

    He turns three this saturday, we celebrated early because we'll be at Walt Disney World in Orlando for Thanksgiving week.  Enjoy the turkey!

    "Offer unto God thanksgiving; and pay thy vows unto the most High..." Psalm 50:14.

    I'm thankful for.....

    God who saved me. I was blinded by lies, but found truth nailed on the cross. Thank you Jesus for dying for a sinner like me.

    For my family back home and my family...I love them all and love the role God has given me, to be a mother and a wife...a homemaker! Titus women!

    For Autumn school, it is such a wonderful thing to see a school that loves God and obey his commandment. I was at her PTA meeting and it started off with a prayer, never in my life I get to see that in any school setting. What a refreshment and an encouragment to the soul.

    For fellowship and encouragement from Christian sisters and brothers. 

    For my kitchenaid, through it I make my family happy with great desserts for the holidays!

  •  I got the cold and feeling a little grumpy.  Don't you just hate it when it's beautiful outside but you feel in the dumps because your body isn't with it.

    Anyway, I like to share a recipe with you all...Asian Honey Walnut Shrimp (from allrecipes.com).  I was so excited to have found a recipe that taste just like the ones you order!  If you ever sat down and eat at an chinese restaurant, you will see this on their menu.  Mainly at a hong kong restaurant.  You won't find it at a chinese buffet!  This is my favorite to order when I go to one.  Enjoy.

    • 1 cup water
    • 2/3 cup white sugar
    • 1/2 cup walnuts
    • 4 egg whites
    • 2/3 cup mochiko (glutinous rice flour)
    • 1/4 cup mayonnaise
    • 1 pound large shrimp, peeled and deveined
    • 2 tablespoons honey
    • 1 tablespoon canned sweetened condensed milk
    • 1 cup vegetable oil for frying

    You can use cornstarch and water for the batter if you are not able to find 'rice flour'.

    Directions

    1. Stir together the water and sugar in a small saucepan. Bring to a boil and add the walnuts. Boil for 2 minutes, then drain and place walnuts on a cookie sheet to dry.
    2. Whip egg whites in a medium bowl until foamy. Stir in the mochiko until it has a pasty consistency. Heat the oil in a heavy deep skillet over medium-high heat. Dip shrimp into the mochiko batter, and then fry in the hot oil until golden brown, about 5 minutes. Remove with a slotted spoon and drain on paper towels.
    3. In a medium serving bowl, stir together the mayonnaise, honey and sweetened condensed milk. Add shrimp and toss to coat with the sauce. Sprinkle the candied walnuts on top and serve.

    For the broccoli, I sauteed for about 5-7 minutes with garlic and oil, until it was not too hard or soft.
